Lane's Tokyo Drip Squeeze Small

Lane's Tokyo Drip is a Japanese-style BBQ sauce, and it behaves nothing like a thick American one. It is built on tamari soy sauce with mirin and miso paste, sharpened with apple cider vinegar and lifted with ginger, garlic and pineapple juice concentrate. The result is savoury and lightly tangy rather than sweet and heavy.

The miso is the part that does the quiet work. It gives the sauce a deep, rounded umami that soy alone does not reach, which is why a thin sauce still tastes like it has body.

The consistency is where the name comes from. It pours rather than sits, so it drips over rice and noodles, glazes cleanly on the grill and caramelises fast under heat. It also doubles as a dipping sauce straight from the 285 mL squeeze bottle without feeling sticky or cloying.
