Cherry is the mild end of the smoking range. The smoke is light and slightly sweet, and it sits behind the meat rather than in front of it, which makes it the forgiving choice if you are still working out how much smoke you actually like.
What cherry is best known for is colour. Over a long cook it builds a deep reddish mahogany on the outside of pork and poultry that is hard to get any other way. If you have wondered how competition pork picks up that colour, a fruit wood is usually part of the answer.
Cherry or hickory
- Cherry mild and slightly sweet. Pork, poultry, fish, and anything you want colour on. Hard to overdo.
- Hickory strong and bacon like. Beef, pork ribs, and traditional American barbecue. Easy to overdo.
Plenty of people run the two together, using hickory for the backbone and cherry for colour and to take the edge off.
Why pellets
Pellets are compressed, so they burn at a consistent rate and give you steady smoke over a long cook without the flare and fade you get from chunks. That consistency is the whole point on a cook that runs for hours.
Storage
Keep them sealed and dry. Pellets are compressed sawdust and they will swell and crumble if they take on moisture, and crumbled pellets jam augers and burn unevenly. A sealed bucket in a dry spot is the way to store them, not the bag left open in a shed.
