Butchers Cleaver Heavy 23cm (9") S/S
The Butcher’s Cleaver is a well-balanced tool designed for heavy-duty meat processing. Built to handle large cuts with ease, it’s an essential in every butcher’s setup
Heavy butcher's cleaver with a 23cm (9in) stainless steel blade.
23cm is the bigger of the two sizes. The extra length puts more mass behind each stroke and gives you more blade in contact with the cut, which is what you want when you are breaking down heavier carcass sections rather than jointing.
Which size
- 20cm (8in) jointing, poultry, ribs and smaller bone. Easier to place, easier to work with for a long stretch.
- 23cm (9in) more reach and more mass behind each stroke. The choice for breaking down heavier carcass sections.
The extra weight is the point, and it is also the thing to respect. A 23cm cleaver carries more momentum than most people expect the first time they pick one up, so give yourself room and a solid block before you start.
How to use it
A cleaver is not a knife and it is not an axe. Let the weight of the head do the cutting rather than driving it with your shoulder, keep the cut square to the bone, and go through in one committed stroke instead of several half ones. Glancing strokes are where accidents happen.
Care
Wash and dry it straight after use. Store it where the edge cannot knock against other steel. A cleaver edge is thicker than a boning knife and does not want the same fine hone, so touch it up on a stone rather than trying to bring it to a razor edge.
