Lane's Sauce 4 Pack

The Lane's Sauce 4 Pack brings together four bottles, 1.3 litres of sauce in total. They are not four versions of the same thing. Each one does a different job, which is the point of buying them together.

Pineapple Chipotle is the sweet, fruity glaze. Kinda Smokey is the smokey all-rounder. Tokyo Drip is a thin, tamari-based Japanese-style sauce for glazing and dipping. One Legged Chicken is a proper cayenne buffalo sauce, and it is the only genuinely hot one in the pack.

Two of them come in 365 mL bottles and two come in 285 mL squeeze bottles. The squeeze tops matter more than they sound. They are the ones you reach for when you are finishing a plate rather than basting a cook.

   It is built on tamari soy sauce, mirin and miso paste, with ginger, garlic and pineapple juice concentrate. Thin enough to pour, and it caramelises fast under heat instead of sitting there as a glaze.

   Pineapple Chipotle, One Legged Chicken and Kinda Smokey all have butter in the blend. Tokyo Drip is the only one without dairy, and it contains soy. Read the bottle before serving to anyone with an allergy.

How to use

1. Brush sauce on near the end of the cook, not at the start. There is sugar in all of these and it will burn over a long heat.
2. For a glazed finish, put a coat on, let it set for a few minutes over heat, then put another on top.
3. Toss wings in One Legged Chicken in a bowl after cooking rather than brushing it on. You get a more even coat.
4. Tokyo Drip caramelises quickly, so keep an eye on it over direct heat.
5. Warm a sauce slightly before glazing and it will spread further and sit more evenly.
6. Keep a separate brush for raw and cooked meat, and do not dip back into the bottle.

Storage & care tips

• Store sealed bottles in a cool, dry place out of direct sunlight.
• Refrigerate after opening. These sauces contain sugar, and three of them contain dairy.
• Wipe the neck and the squeeze nozzle before putting the cap back on. Dried sauce in the nozzle is what blocks it.
• Never pour used sauce back into the bottle.
• Give a bottle a shake before use. Separation is normal and is not a fault.

FAQs

Which one is actually hot?
One Legged Chicken. It is a cayenne-based buffalo sauce and the bottle is marked spicy. Pineapple Chipotle has a mild smoky warmth from the chipotle, and the other two are savoury rather than hot.

Are these cooking sauces or table sauces?
Both. All four glaze well during a cook and all four work poured on at the table. Tokyo Drip in particular doubles as a dipping sauce straight from the bottle.

Why are two bottles smaller?
Tokyo Drip and Kinda Smokey come in 285 mL squeeze bottles, and Pineapple Chipotle and One Legged Chicken in 365 mL bottles. That is how Lane's package them, and the squeeze format suits the thinner sauces.

Is there dairy in these?
Yes, in three of the four. Pineapple Chipotle, One Legged Chicken and Kinda Smokey all contain butter and are declared as containing milk. Tokyo Drip is the only one without dairy, and it is declared as containing soy.

Do they need refrigerating?
Sealed, no. Once opened, yes. Keep them in the fridge and use a clean spoon or brush.

Can I buy the bottles individually?
Yes, all four are sold as singles, along with the rest of the Lane's sauce range.
