Stainless steel S hook, 15cm (6in). The middle size, and the one most people reach for first.

15cm gives enough drop to clear the rail properly without the product swinging low into whatever is hanging below it. It handles most of what goes through a cool room day to day: primals, legs, shoulders, bags of trim, and smaller carcass sections. If you are only going to stock one size, this is usually it.

Which size do you need

• 10cm (4in) for sausages, smallgoods, tools and gear on racks
• 15cm (6in) for general rail and rack work
• 20cm (8in) for larger cuts and carcass sections

Rail spacing decides this more than the meat does. On a tightly spaced rail a shorter hook stops product touching, and on an open rail a longer hook makes loading easier.

Why stainless

These hold meat in a cool room or a drying setup for weeks at a time, at high humidity, and they get washed down constantly. Plated or mild steel hooks pit and rust in that environment and the rust ends up on the product. Stainless washes clean and stays clean.

The polished S shape lets you lift product on and off one handed, which matters when the other hand is holding the weight.

Care

Wash in warm soapy water, rinse, and dry fully before storing. Retire any hook that has been bent open, pitted, or dropped on a hard floor, rather than straightening it and putting it back into service.
