The 15cm curved narrow boning knife does the close work around bone. The 15cm American skinning knife pulls hide and cleans up fat and silverskin. The 25cm butchers knife takes the long cuts and portioning that a boner is too short for. The 30cm honing steel keeps all three cutting instead of tearing, and the 4 pouch wrap carries them so blades aren't knocking about loose in a drawer.
All three knives are Swiss-made Victorinox Fibrox: stainless steel blades, textured handles that stay grippy with wet hands, light enough to hold all day. They ship factory sharp. Hand wash and dry them straight away.
