Stainless steel filling funnel for Tre Spade #5 sausage stuffers. 12mm outlet, the narrowest of the four sizes.
12mm is the thin sausage size. It suits sheep casings around 22/24mm, which covers chipolatas, thin breakfast sausage, cheerios and merguez.
A narrow funnel changes how the stuffer behaves. The meat has less room to move, so it builds pressure faster and fills more slowly, and that is exactly what you want on a delicate casing. Fitting a wide funnel and trying to go gently does not achieve the same thing.
Which size do you need
- 12mm sheep casings, chipolatas, thin breakfast sausage
- 20mm hog casings, snags, bratwurst, thick sausage
- 30mm cacciatore and smaller salami
- 40mm salami and larger fibrous casings
The size is about the casing, not the machine. All four fit the same #5 stuffer, so most people build up a set over time rather than choosing one.
Why stainless
Raw meat sits against this for the length of a batch and it gets washed constantly. Stainless does not pit or discolour, and it wipes clean rather than holding fat in the surface.

Care
Wash in warm soapy water straight after filling, before fat has a chance to set inside the tube. Rinse, dry fully, and store somewhere it will not get knocked out of round.
