Stainless steel filling funnel for Tre Spade #5 sausage stuffers. 30mm outlet, the size for cured sausage rather than fresh.
30mm suits cacciatore and smaller salami, filled into natural cacciatore casings or fibrous casings in the same range.
Cured sausage asks more of the fill than fresh sausage does. Air pockets that would cook out of a snag will sit inside a salami for six weeks and become a problem, so a wider funnel that lets the mince pack in solidly is doing safety work as well as speed work. Fill firm, and prick anything that traps air before it goes on the hook.
Which size do you need
- 12mm sheep casings, chipolatas, thin breakfast sausage
- 20mm hog casings, snags, bratwurst, thick sausage
- 30mm cacciatore and smaller salami
- 40mm salami and larger fibrous casings
The size is about the casing, not the machine. All four fit the same #5 stuffer.
Why stainless
Raw meat sits against this for the length of a batch and it gets washed constantly. Stainless does not pit or discolour, and it wipes clean rather than holding fat in the surface.

Care
Wash in warm soapy water straight after filling, before fat has a chance to set inside the tube. Rinse, dry fully, and store somewhere it will not get knocked out of round.
