Stainless steel filling funnel for Tre Spade #5 sausage stuffers. 40mm outlet, the widest of the four sizes.
40mm is the salami size. It suits larger fibrous casings and the wider natural casings, which is what full size salami and the bigger cured sausages are made in.
At this diameter the fill has to be solid. A large salami with air trapped inside it will dry unevenly and give wild mould somewhere to take hold during a hang that runs for weeks, so the wide outlet exists to let mince pack in without folding air in behind it. Fill firm, prick any pockets, and tie off tight.
Which size do you need
- 12mm sheep casings, chipolatas, thin breakfast sausage
- 20mm hog casings, snags, bratwurst, thick sausage
- 30mm cacciatore and smaller salami
- 40mm salami and larger fibrous casings
The size is about the casing, not the machine. All four fit the same #5 stuffer.
Why stainless
Raw meat sits against this for the length of a batch and it gets washed constantly. Stainless does not pit or discolour, and it wipes clean rather than holding fat in the surface.
Fitment

Care
Wash in warm soapy water straight after filling, before fat has a chance to set inside the tube. Rinse, dry fully, and store somewhere it will not get knocked out of round.
